Mini Frozen "Cheesecake" Bites!


If you are new to my food creations then you may not know that I have given up processed sugar and have opted for natural sweetners instead. The only < problem > is, store bought treats are out of the question. So when the cravings hit, what do I do? I plan ahead, that's what I do. I gave up sugar.....not my sweet tooth! I like to make miniature treats so when the urges come I am prepared to satisfy them! Today I am sharing my mini frozen "cheesecake" bites. I make these all the time and with different variations. This time it's all about the berries! I started off with the granola I shared at the beginning of the week. If you missed it.....shame on you, you are missing out! It's super simple and is a great snack all on it's own. You can find the recipe here. Layer in fresh whipped cream, cream cheese and top it with a homemade berry jam and you have a winner. This happens to be a mixed berry jam with strawberries and blackberries, but if you are curious as to how you can make your own.....I would start with this delicious strawberry jam I shared a couple of weeks ago. Here is what you are going to need for these treats!

Utensils

-mini muffin pan and liners

-hand mixer

-bowl

-freezer

Ingredients

-granola (homemade preferred)

-cream cheese (I used 1/3 less fat and could tell the difference)

-whipping cream

-agave nectar

-vanilla extract

-lemon (zest & juice)

-berry jam (homemade preferred....view video below on how to make your own!)

I am a visual learner so I make videos! And remember, I purposely do not give measurements because I want to encourage you to be free in the kitchen. You will be surprised how much better your dishes will taste if you challenge yourself! Taste all along to make sure everything is in balance! Have fun!
