Lentils & Pasta with White Wine Garlic Sauce


I know it sounds weird pairing lentils with pasta.....but hey, there aren't any rules to cooking! Some days I just don't have a taste for meat or truthfully I just don't feel like cooking it....and at those times, lentils are a great substitute. I still feel full and don't even miss the meat at all. I usually use lentils for vegetarian burgers and of course soup, but they are also great for tacos, sloppy joes, and in this case a delicious pasta dish.

I was being somewhat creative in the kitchen, and came up with this dinner using what I had on hand. Mostly because I didn't feel like going to the grocery store but sometimes I like to imagine I'm on the show Chopped and like to make things up as I go. Plus I had a bottle of white wine and wanted to make a nice rich sauce! It turned out really good and I would definitely make it again. I really encourage you all to explore your cooking......you never know what masterpiece dish you will come up with when you are not following strict recipes!

Here is what you will need:

-pasta shells (I used shells but you could really do any type)

-brown lentils

-celery salt

-dried minced onions

-dried rosemary

-dried basil

-chicken stock

-heavy cream

-white wine

-fresh rosemary

-fresh thyme

-garlic

-shallots

-feta cheese

-olive oil

I served our dish up with some roasted broccoli and fresh cherry tomatos.....Mmmmm! It was DELICIOUS!!!
