Today's post is in honor of my mini-me! One of my daughters favorite breakfast meals is blueberry pancakes. I have to admit she got me into it because up until she expressed her love for them last year, I had never even tried them before.. But now....mmmm, I get excited when she's home and even hints that she wants pancakes! I just wish she was able to come home from school more often.
The great thing about these pancakes are that they are fresh and because they are made from scratch you can make them healthy-ER than what you usually get when you order out! Here is the recipe below but you can also add in other fruits, like strawberries, raspberries....or just plain!
What you will need:
1/2- cup whole wheat flour
1/2- cup all purpose flour
1- teaspoon baking powder
1/2- teaspoon baking soda
1/2- teaspoon salt
1- teaspoon ground flaxseed (optional)
2- tablespoons agave nectar (or honey)
1- tablespoon butter
2- tablespoon distilled vinegar
1- egg
3/4 cup cashew milk (or almond milk, whole milk)
blueberries (as much or as little as you like, just save some to garnish with!)
Mix dry ingredients. Melt butter and agave nectar then combine with wet ingredients. Mix everything until combined. Do not over mix...you should still have some lumps. Fold blueberries in and then start cooking! Try not to eat them all yourself.....I encourage sharing!
