If I could have my choice it would be summer all year round because it's warm and since I'm always cold it just works out better for me... But fall just may be my most favorite food season! I love comfort food, stews and delicious spiced treats. So of course I couldn't wait for Labor Day to hit so I could start shopping for my fall ingredients! And I am already getting started with my first fall vegetable...BUTTERNUT SQUASH! From sweet to savory dishes, butternut squash is so versitile the options are endless!
Today I am making something so delicious I could eat it on EVERYTHING! Everyone has heard of apple butter....but have you ever thought of making something similar using butternut squash instead? Leave it to me to experiment for you and put you on! This stuff is so good, I am pretty much putting it on everything! Toast......and Ohhhhhhhh these biscuits! Side note....these biscuits..... so easy to make and this "butter' takes them to a whole other level. Everytime I post these biscuits on Facebook or Instagram, I get asked for the recipe.....well today I am sharing! I knew they would be perfect for this spread...and boy was I right!
Here is what you will need!
Biscuits:
-1 cup whole wheat flour
-1 cup all purpose flour
-2 1/2 teaspoon baking powder
-1 teaspoon salt
-1/3 cup oil
-2 tbs frozen butter (or more if you want them to be flakier)
-3/4 cup milk (I used cashew milk but you can pretty much use any type of milk you like)
-Preheat oven to 475 degrees. Bake for approximately 15 minutes.
*If you would like regular biscuits and not whole wheat, just use 2 cups of all purpose flour.
**The more cold butter you add the flakier (but fatter) your biscuits will be!
***Dont over mix, stir all the ingredients just until the dough starts to form. Turn out onto a floured surface and roll slightly. When cutting out your biscuits, do not twist the cutter, doing so will hinder your biscuits from rising. Be sure that your biscuits are touching on the baking sheet. You can also brush the tops with butter and honey if you like!
Butternut Squash & Sweet Potato "Butter":
-butternut squash
-sweet potatoes
-agave nectar
-nutmeg
-allspice
-cinnamon
-lemon juice (fresh)
-orange juice (fresh)
-honey
-water
*Combine all the ingredients and add water. Bring mixture to a boil and then reduce the heat to low/medium and cover. Cook until squash and potatoes are fully cooked and mushy. Be sure to keep a watchful eye so that your mixture does not burn. Add additional water if needed. Let it cool for a moment and then blend until smooth. Pour into a jar and refrigerate!
This 'butter" is the definition of FALL! If you're ready for the new season.....this will definitely get you in the mood!!!
