Turkey Meatballs, Homemade Marinara & Pesto Bread Twist


I am so excited to be sharing this cooking video with you! After a long day of work in the studio sewing up a storm....I needed to unwind in the kitchen. Cooking relaxes me and puts me in another mind space of pure enjoyment. And the other night I made a meal that was so incredibly delicious I could have eaten it for a week straight. But of course when you live in the house with grown men, that is only a dream! I'm one that LOOOOOVVVVVEEES leftovers but this meal barely made it to the next day. I guess that how you know it hit the spot!

I made turkey meatballs packed with fresh herbs in a homemade marinara sauce, paired it with pesto fettichini and followed it with what my son calls "green bread" which is a pesto bread twist! SOOOO GOOD!!! At I will be covering it all in the video below.

Here are the basic ingredients that you will need.

Meatballs:

-fresh thyme

-fresh rosemary

-fresh oregano

-garlic

-red onions

-salt

-pepper

-egg

-panko bread crumbs

-olive oil

Marinara:

-tomato puree

-red onions

-shallots

-bell peppers (I used a mix of red, orange, yellow and green)

-portabello mushrooms

-fresh thyme

-fresh rosemary

-fresh oregano

-garlic

-dry basil

-dry parsley

-sage

-bay leaf

-balsamic vinegar

-red wine vinegar

-salt

-pepper

-olive oil

Pesto Pasta:

-fettichini noodles

-butter

-heavy cream

-milk (I used unsweetened cashew milk)

-pesto (store bought or homemade -recipe coming soon!)

-lemon juice

-salt

Pesto Bread Twist:

-pizza dough (store bought or homemade - recipe coming soon!)

-pesto

As usual I encourage you not to get hung up on the measurements, rather than to taste as much as you can all along..... Once I started to do this, my cooking elevated and became way more flavorful. I hope you enjoy cooking with me!!

*I've been asked by several people about the infused oils that I have used. I received a gift set from my mother from a company called O'lilve a Little. They are based out of Connecticut but they ship all over! Today I used two of their products in this video, the italian herb infused olive oil and red wine vinegar (which I can't seem to find on their website, but I'm sure if you called them they can hook you up!)
