I realized that I never shared this beef stew with you all! All I know is that whenever it is really cold outside this is what I want for dinner! What I enjoy the most about this meal is how extremely simple it is to bring together plus it packs so much flavor being that it's slow cooked in the crockpot. When I tell you your house is going to smell SOOOOOO good!!!! Try not to keep removing the lid to gaze at the deliciousness! You know what..... I would even make this completely vegetarian by adding big portabello mushrooms and cutting them into chunks in place of the beef. Either way, it's just so delicious you will want to make it over and over again!
Here's what you will need:
-beef stew meat
-baby rainbow baby potatoes
-rainbow baby carrots
-mushrooms
-onions
-garlic
-red wine
-parsley, fresh
-thyme, fresh
-sage, fresh
-worcestershire sauce
-soy sauce
-smoked paprika
-salt
-pepper
-water (or beef/chicken/vegetable stock)
As you all know by now, I don't usually cook with measurements unless I am baking. I love cooking this way because I find that my dishes are way more flavorful. Plus it makes preparing meals, large or small, a breeze using the "taste it" method. If you're unsure about seasonings, you can always start with less and add more along the way as your tastes buds see fit. If you're like me, eventually your seasoning and cooking skills will start to be consistently on point and you will officially start tooting your own horn after every meal. Practice makes perfect!
With this stew I recommend making sure that you have equal parts meat to veggies. I also suggest making sure that everything is uniform in size to ensure even cooking. I got a late start the day that I made this stew so I cooked it on high (4-6 hours) but I typically prefer to cook on low either 6-8 hours or 8-10. Be sure to check on your stew after a few hours and give it a stir. Once the meat is cooked, it's a great idea to taste the cooking liquid to check your seasonings and add additional if neccessary.
Your house is going to smell so good you will be struggling to hold out until dinner. I like to serve my beef stew with a side of cornbread and nothing else. Mmmmmm..
